The same thing happened to me when I started listening to Slayer. Seasons and RIB were my favorite albums at first, but I gradually realized that SNM and Hell Awaits were the best.

Show No Mercy isn't their best IMO, but it's fucking good. I stand by the fact that Seasons and SoH are their best.... leaning towards SoH.

I've never particularly liked South of Heaven. It just seems a little bland compared to their earlier releases.
